College students usually don’t have much free time on hand to dedicate to learning different dishes and experimenting with ethnic cuisine. With many responsibilities and assignments, it can be tricky to find motivation for anything else.

  • One lb ground beef
  • One lb. spaghetti
  • ⅓ c. bread crumbs
  • One large egg
  • Two garlic cloves, minced
  • ½ c. onion, finely chopped
  • Finely chopped parsley
  • ¼ c. freshly grated parmesan, plus more for serving
  • Kosher salt & freshly ground black pepper
  • Red pepper flakes
  • Extra-virgin olive oil
  • One bay leaf
  • 28-oz. can of crushed tomatoes

Directions:

First, cook your pasta in salted boiling water until al dente and drain it. Combine beef, bread crumbs, parsley, parmesan cheese, egg, garlic, red pepper flakes, and one teaspoon of salt. Mix these ingredients until they combine and form 16 balls. Next, heat some oil on medium heat in a large pot and add the meatballs. Turn them occasionally and cook until they are browned on all sides; it’ll take about 15 minutes. Transfer them to a plate and leave them aside.

Add olive oil and onion to a large pot and cook until translucent. Put tomato sauce and one bay leaf. Next, season this sauce with pepper and salt and bring it to a simmer. Lastly, return the meatballs to this pot and simmer for another 10 to 15 minutes. Finally, put some pasta on a plate and a scoop of sauce and meatballs. Feel free to top it with some more parmesan cheese and enjoy!

Hot Calzones

If you are a pizza lover – this will be your new favorite recipe. Calzones are stuffed wrapped up pizza. Everything is packed in the pillowy dough, and nothing will slide off. This recipe serves four people and can be done in under 50 minutes.

Ingredients:

  • One ¾ lb. pizza dough
  • All-purpose flour for surface
  • Cooking spray
  • One c. pizza sauce
  • ½ c. pepperoni
  • One c. ricotta
  • One c. shredded mozzarella
  • Extra-virgin olive oil for brushing
  • Kosher salt

Directions:

Grease two baking sheets with cooking spray and preheat your oven to 500°F. Divide your pizza dough into four pieces and roll one piece at a time on a floured surface. Spoon some pizza sauce in the middle of the rolled-out dough and top it with some ricotta cheese, pepperoni, and mozzarella cheese.

Next, fold the dough in half, dampen the seams with water, and pinch the edges. Do this with the rest of the left dough, and transfer these calzones onto baking sheets when you are done. Brush them slightly with some olive oil and sprinkle with salt. Make some slits for steam vents and bake them until golden tops appear. Lastly, brush them with some more oil and bake for 20 minutes. Let them cool before serving.

Caprese Chicken Rhapsody

This classic Caprese salad turned into a one-pan excellent rhapsody meal you’ll definitely like. It is completed with balsamic-glazed tomatoes, fresh basil, and cheesy chicken. It serves four people and can be done under 35 minutes!

Ingredients:

  • One lb. boneless skinless chicken breasts
  • 1 pt. grape tomatoes halved
  • Freshly torn basil
  • Four slices mozzarella
  • Two cloves of garlic, finely minced
  • ¼ c. balsamic vinegar
  • Freshly ground black pepper & Kosher salt
  • Extra-virgin olive oil

Directions:

Heat olive oil in a large skillet on some medium-high heat. Season chicken with pepper and salt. Cook until golden color appears on the chicken surface and transfer to a plate. Next, put balsamic vinegar and minced garlic into the skillet and cook until fragrant; add tomatoes and season everything with some pepper and salt.

Let this sauce simmer for 5 to 10 minutes, and add some basil toward the end. Lastly, return the chicken to the sauce, top it with mozzarella, and cover it with a lid. Let the cheese melt and when it does, spoon some tomatoes over the chicken and serve it!

Sausage Stuffed Zucchini Style

This is a perfect idea for a low-carb bomb dish that serves four people and can be done in under 40 minutes.

Ingredients:

  • Four large zucchini halved lengthwise
  • Four chicken sausages, thinly sliced
  • ½ c. Italian breadcrumbs
  • Two cloves of garlic, minced
  • Olive oil
  • ¾ c. shredded mozzarella
  • ½ c. shredded fontina
  • ¼ c. chopped fresh basil

Directions:

Preheat the oven to 350 degrees F, and scoop the zucchini insides into a large bowl. Heat some oil over medium-high heat in a large skillet and add chicken sausages. Cook them for 10 minutes and transfer them to another bowl.

Add breadcrumbs, ½ cup of mozzarella, fontina, basil, and garlic to that same bowl. Spoon this mixture into zucchini and top with the rest of the mozzarella. Bake them in the oven until zucchini is tender and cheese is melted and golden, for about 15 minutes. Serve it and top it with some fresh basil.
