I got a masterbuilt electric smoker for Christmas from my parents and currently smoking a rack of chicken legs.  I’m not currently smoking the legs in the smoker, but only in the oven (at a low heat), as I’m planning on using the smoker in the future.  The smoker is very easy to use, has a digital display, and is relatively quiet when compared to a gas smoker.  The chicken leg recipe I am using is from “The Recipe Critic “which is very easy to follow.  I am using apple wood pellets for smoke, and using my oven’s broiler setting to crisp the skin.  Other than that, I am following the recipe closely.

All the better if your smoker can reach temperatures of 250 to 275 degrees. The chicken skin will be more flavorful, and the smoking time will be reduced. When smoking chicken, do you leave the skin on?

Normally, I remove the skin before smoking, mostly because I believe the skin never cooks well and remains rubbery at low temperatures. Plus, I figured that with the skin on, it would flavor(penetrate) the chicken less. I kept the skin on this time and put it skin up on the grills. It turned out a lot better than I expected.

When it comes to smoking chicken, what is the ideal temperature?

The safe temperature for smoked chicken is 165 degrees Fahrenheit. The amount of salmonella bacteria is quickly decreased to a safe level at that temperature. But did you know that if you cook chicken to less than 165 degrees, it’s perfectly safe to eat?
