If you’re like most Americans, you probably grill your meats for most of the year. But did you know that if you buy and cook your meat in a particular way, you can get half smoked, half cooked smoked meats?

There is a problem with barbecuing meat on the grill, meat that is intended to be basted up, and it’s called the two-zone rule. We’re all familiar with the concept: you can’t cook a piece of meat evenly on the grill if both sides have different heat levels. The heat transfer from the outside to the inside of the meat is much slower than the transfer from the outside to the inside of the meat. So, you’ll either wind up with a piece of meat that’s charred on the outside and raw on the inside, or you’ll end up with a meat that’s totally undercooked on one side and way over done on the other

Some people are fans of grilling the entire rack of ribs, leaving nothing but the bones. Others like to start with the ribs and cook them until the meat is falling off the bones. Some like to finish with the rack being sitting on the grill, brisket style, and others like to make it fall apart, so they can pick at it all day. Heat a grill or a grill pan over high heat for the half-smokes. Cut the half-smokes in half lengthwise and grill for approximately 1 1/2 minutes each side, or until beautifully marked and cooked through.
