Many years ago, I learned a valuable lesson: the easiest and quickest way to cook something is to use fresh herbs. I’ve found that when I grow tarragon in my garden, I almost always have a surplus. I don’t mind, since it’s good for my health, but I have to plan ahead. In this case, I’m not substituting dried tarragon for fresh, but I am substituting dried tarragon for fresh on the same dish. And I’m using a lot less than usual.

So, you’re making a roast dinner for your family. The recipe calls for tarragon, which is a healthy herb you can buy fresh or dried. But can you use dried instead of fresh?
