My dear friends, there is, and never was a better time to make cordial than now, for it is the season of brandy, and cognac, and champagne, and sherry, and sloe gin; and these are not only very fine and noble liquors, but they are also good and necessary ones for you, my friends, to have in your houses.

There are many ways to make a cocktail, and almost all of them involve brandy or cognac. The main ingredient they both have in common is alcohol, so you would think that one would substitute for the other in recipes simply by swapping the alcohol for brandy or cognac. The truth is, the majority of the recipes I come across call for some type of cognac or brandy, and in nearly all the ones that I have tried, the substitution doesn’t work.

Here’s another one that’ll make you say, “hmm” and “OK, but…”: The title of this post is a trick question. The answer is no. If you’re not familiar with brandy and cognac, let me show you. Brandy is a distilled spirit, made from fermented grapes. Cognac is a region in France and its region’s cognac, made from fermented grapes. The two use different grapes and musts, and the end result is a brandy from the French region (or a cognac from the French region) and a cognac from the French region.

If a recipe asks for brandy, cognac may certainly be used in its place. To begin with, in cookery, cognac and brandy are equivalent; cognac is just a subset of brandy. Flavored brandies, such as Grand Marnier, are among the most well-known liqueurs.

So, what can I use in place of brandy in the kitchen?
